Dinner- Southern Fried Pork Chops n’ Tators

(5 1/2 Net Carbs per serving)

Ingredients: ¼ cup olive oil 4 pork chops egg wash (beaten egg with a little milk) 1 cup fry coating (recipe below) (1 net carbs per serving) 2 cups green beans 1/2 cup serving (3 net carbs) 1 head cauliflower 1/2 cup serving (1 1/2 net carbs) 2 tablespoons mayonnaise 1 tablespoon butter salt and pepper

Directions:

  1. Prepare “Tators” by steaming a head of cauliflower in a couple of inches of water until fork tender. Drain cauliflower and place into food processor with a chopping blade. Add two tablespoons of your favorite mayonnaise, one tablespoon of butter, and salt & pepper. Process until smooth.

  2. Place the chops in an egg wash before coating with ground fry coating.

  3. Pan fry both sides in olive oil on medium heat being careful not to burn. The length of time you fry the chops will depend on the thickness of the chops. If your chops are very thick you may have to flip them a couple of times in order to cook through without burning your coating. I like chops around ½ inch thick. Only one flip is required with that thickness.

  4. While your chops are cooking bring 1 inch of salted water to the boil over high heat in a saucepan. Cook your green beans to desired tenderness and strain. Fry Coating; Low Carb corn muffin mix (dixiediner.com item # 240195U), Unsweetened fried pork rinds Grind your pork rinds in a food processer until they reach maximum grind. Mix pork rinds with corn muffin mix 2 to 1 with the pork rinds being the larger amount. Mix in quantity and store in a tight container in your cupboard for quick easy meals.

Dessert- One-Minute Chocolate Cake

(2 Net Carbs per cake)

Ingredients: 1 large egg (1 net carb) 5 teaspoons xylitol or 10 packets stevia 2 tablespoons unsweetened cocoa powder 1 tablespoon heavy cream 1 tablespoon butter, softened 1 teaspoon baking powder ½ teaspoon vanilla extract Nonstick cooking spray 2 tablespoons Reddi-wip topping (1 net carb)

Directions:

  1. Beat the egg with a fork in a small bowl. Add the xylitol or stevia, cocoa powder, cream, butter, baking powder, and vanilla and mix well.

  2. Lightly coat an 8-ounce microwavable coffee mug with nonstick cooking spray. Pour the batter into the mug and microwave on high for 1 minute.

  3. Remove the cake from the microwave and top with Reddi-wip topping. Eat the cake right from the mug.
